  • 1/2 c. mayonnaise
  • 1/4 c. grated Parmesan cheese
  • 2 Tbsp. Dijon mustard
  • chicken breasts
  • 2/3 c. cornflake crumbs

Directions

    Mix mayonnaise, Parmesan cheese and mustard in a small bowl. Measure out 1/3 cup and refrigerate.

    With remaining mixture, brush both sides of chicken.

    Coat well with crumbs.

    Arrange in lightly greased shallow baking pan.

    Bake in preheated 400° oven for 25 minutes or until cooked through.

    Serve with reserved mayonnaise mixture for dipping.

    Makes 4 to 5 servings.
