- 6 potatoes
- 1 stick margarine
- 1/2 c. water
- salt and pepper to taste
- 1 1/2 tsp. herbs (parsley, chives, etc.)
- 1 1/2 tsp. Dijon mustard
- 3 Tbsp. sour cream
Directions

1Slice potatoes thin.

2Rinse under cold running water to remove most of the starch.

3Dry well.

4Melt margarine and saute potatoes until golden.

5Add water, salt and pepper; cover and cook gently for 20 minutes.

6Drain potatoes.

7Mix remaining ingredients and spoon over potatoes just before serving.
