  • 1 pkg. yeast
  • 1/4 c. warm water
  • 1 c. lukewarm cottage cheese
  • 2 Tbsp. sugar
  • 1 Tbsp. butter
  • 3 Tbsp. chopped fresh dill weed
  • 1 Tbsp. chives
  • 1 tsp. salt
  • 1/4 tsp. baking soda
  • 1 egg
  • 2 1/4 to 2 1/2 c. all-purpose flour

    In small bowl, sprinkle yeast over warm water. In large bowl, combine cottage cheese, sugar, butter, dill weed, chives, salt, soda and egg; beat at medium speed until well blended. Beat in yeast mixture. Add 1 1/2 cups of flour. Gradually mix in enough of remaining flour by hand to form stiff, smooth dough. Cover bowl with a damp towel. Let dough rise in a warm place until doubled in bulk, about 1 hour. Punch dough down (dough will be moist and sticky). Turn dough into buttered souffle dish. Let rise until doubled, 30 to 40 minutes. Bake at 350° for 40 to 50 minutes. Yields 1 loaf.
