- Desired amount of carrots cut in strips
- 1 c. white vinegar
- 1 tsp. salt
- 2 Tbsp. sugar
- 1 tsp. dill weed or 2 Tbsp. of fresh dill
- chopped parsley
Directions

1Boil carrots until just tender.

2Make mixture of vinegar, salt, sugar, and dill weed and soak carrots for several hours or overnight. Drop carrots into this mixture while still hot. Before serving, remove carrots, reserving liquid.

3Serve on a dish with a sprinkling of the parsley.

4Also the reserved liquid may be used again.
