- 2 lbs green beans
- 1/4-1/2 tsp. cayenne pepper or possibly Tabasco sauce (according to your heat preference)
- 2 cloves garlic, whole and peeled
- 1/2 tsp. mustard seeds (optional)
- 1 head dill (or possibly 1/2 teaspoon dill weed)
- 5 c. distilled vinegar
- 1/2 c. pickling salt
- 5 c. water
Directions

1Prepare jars for canning.

2Wash and trim beans at ends.

3Don't snap beans.

4Bring vinegar, salt and water to a boil.

5In the bottom each warm sterilized jar, put the garlic cloves, mustard seed, and dill.

6Pack jars with fresh green beans, packed lengthwise.

7Don't snap beans.

8Process for 20 min at 1000' altitude, or possibly adjust time according to your altitude.
