Ingredients

  • 2 lbs green beans
  • 1/4-1/2 tsp. cayenne pepper or possibly Tabasco sauce (according to your heat preference)
  • 2 cloves garlic, whole and peeled
  • 1/2 tsp. mustard seeds (optional)
  • 1 head dill (or possibly 1/2 teaspoon dill weed)
  • 5 c. distilled vinegar
  • 1/2 c. pickling salt
  • 5 c. water

    Prepare jars for canning.

    Wash and trim beans at ends.

    Don't snap beans.

    Bring vinegar, salt and water to a boil.

    In the bottom each warm sterilized jar, put the garlic cloves, mustard seed, and dill.

    Pack jars with fresh green beans, packed lengthwise.

    Don't snap beans.

    Process for 20 min at 1000' altitude, or possibly adjust time according to your altitude.
