  • 1 1/4 c. oat bran cereal
  • 1 c. self-rising flour
  • 1 1/2 c. evaporated skim milk
  • 2 egg whites
  • 2 Tbsp. honey
  • 3 Tbsp. vegetable oil

Directions

    Preheat oven to 425°.

    Mix dry ingredients in a large bowl. Mix the milk and remaining ingredients in a blender at low speed, then add to dry ingredients and stir until just mixed.

    Line muffin pan with paper baking cups and fill with batter.

    Bake 15 minutes or until toothpick comes out clean.
