  • 2 Tbsp. flour
  • 2 Tbsp. vegetable oil
  • 1 c. chopped onion
  • 1 c. chopped celery
  • 1/2 c. green peppers, chopped
  • 2 cloves garlic, minced
  • 1/2 lb. lean ground beef
  • 1/2 lb. ground pork
  • 1/2 lb. chicken giblets, chopped
  • 2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 c. chicken broth or water
  • 3 c. hot, cooked rice
  • 1 c. sliced green onion tops

Directions

    Brown flour in oil until it is a deep red-brown, stirring constantly to prevent burning.

    Add onion, celery, green peppers and garlic.

    Cook until vegetables are tender.

    Stir in beef, pork, giblets and seasonings.

    Continue cooking until meat loses its red color.

    Blend in broth, cover and simmer 25 minutes.

    Stir in rice and onion tops.

    Cook 5 minutes longer.

    Mixture should be slightly moist.
