Ingredients

  • 2 1/2 c. sugar
  • 1/2 c. water
  • 2 large egg whites
  • 1 tsp. vanilla (do not use imitation)
  • 1/2 c. white Karo
  • 1 c. pecans

Directions

    Stir sugar, water and Karo together in a saucepan and bring to a rolling boil.

    Pour 1/3 of the mixture over the egg whites, which have been beaten until stiff.

    Beat mixture thoroughly and set aside.
  4. 4
    Cook remaining syrup to hard ball stage or until strings fly away when the syrup is poured from a spoon held about 12 to 15 inches above the pot.

    Beat the last syrup into the egg white mixture.

    Beat until it holds shape or until it is not shiny.

    Add vanilla and pecans and drop on wax paper.

    Do not cover.

    Leave open to dry out. Cooking time will vary according to the weather.

    It makes best on cold, dry days.
