Dixie Pineapple Beans

  • 14 cup light molasses
  • 14 teaspoon ground cinnamon
  • 14 teaspoon ground ginger
  • 18 teaspoon ground nutmeg
  • 12 teaspoon salt
  • 2 (16 ounce) cansvegetarian beans
  • 1 (8 ounce) can pineapple chunks
  • 2 tablespoons pineapple juice
  • 12 teaspoon lemon juice
  • 12 cup pecans, chopped
  • 1 tablespoon light molasses
  • 1 tablespoon butter, melted

Directions

    Combine 1/4 cup molasses, cinnamon, ginger, nutmeg and salt in a 1 1/2 quart casserole.

    Add beans, pineapple, pineapple juice, lemon juice and 1/4 cup of the pecans.

    Mix well.

    In cup, combine remaining pecans, 1 tablespoons molasses and butter).

    Spoon around edge of beans (optional).

    Bake at 350 degrees for 40-45 minutes or until beans are bubbly.
