Ingredients

  • 6 tablespoons butter melted
  • 1 teaspoon cinnamon
  • 3 tablespoons sugar
  • 2 cups graham cracker crumbs
  • 24 ounces cream cheese at room temperature
  • 1 cup sugar
  • 3 large eggs at room, temperature
  • 1/2 teaspoon vanilla extract
  • 2 cups sour cream
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons sugar

Directions

    Preheat oven to 375F (190C).

    Mix crust ingredients.

    Press into springform pan on bottom and sides.

    Mix filling ingredients and pour into pan.

    Make sure all ingredients are room temperature.

    Bake 30 to 35 minutes, or until slightly browned.

    Remove cake from oven and increase oven temperature to 500F (255C).

    Mix topping ingredients and gently spread on top of cake.

    Return cake to 500F (255C) oven for five minutes.

    Remove from oven, cool to room temperature, and chill overnight.
