- 1 (8 oz.) can cream-style corn
- 3/4 c. shredded sharp Cheddar cheese
- 1/4 c. sour cream
- 1/4 c milk
- 1 egg
- 1 Tbsp. sugar (optional)
- 1/2 to 1 c. chopped onion
- nonstick cooking spray
- 1 1/2 c. self-rising cornmeal
Directions

1Combine corn, cheese, sour cream, milk, egg and sugar until well mixed.

2Spray nonstick cooking spray directly on chopped onion and microwave 2 to 3 minutes.

3Add to corn mixture.

4Stir in cornmeal and blend well.

5Fill muffin cups 3/4 to almost full. Bake at 350° for 25 to 30 minutes.

6Makes 12 muffins.
