Double Cranberry Bread

  • 1-3/4 cups flour
  • 1 cup sugar
  • 1 Tbsp. CALUMET Baking Powder
  • 2 cups whole grain cereal flakes with cranberries and almonds
  • 1 cup milk
  • 1 egg
  • 1/3 cup orange juice
  • 2 Tbsp. oil
  • 1 cup cranberries, coarsely chopped

Directions

    Mix flour, sugar and baking powder in large bowl.

    Mix cereal and milk in medium bowl; let stand 3 minutes.

    Add egg, orange juice and oil; mix well.

    Add to flour mixture; stir just until moistened.

    (Batter will be lumpy.)

    Gently stir in cranberries.

    Pour into greased 9x5-inch loaf pan.

    Bake at 375F for 50 minutes to 1 hour or until toothpick inserted in center comes out clean.

    Cool 10 minutes.
