  • 1 avocado halved, peeled, pitted, sliced
  • 1/2 lemon juiced
  • 2 tablespoons fresh herbs mixed, such as chives, basil and oregano, chopped
  • 3 1/2 ounces ricotta cheese
  • 12 slices multigrain bread
  • 5 1/4 ounces baby arugula
  • 4 slices prosciutto
  • 2 tomatoes sliced

Directions

    Toss avocado with lemon juice, herbs and black pepper.

    Spread ricotta over 4 slices of bread. Top with arugula and prosciutto. Add another slice of bread. Arrange avocado and tomato slices on top. Finish with remaining bread. Cut in half diagonally.
