  • 4 cups flour
  • 3 1/3 tablespoons yeast
  • 1/4 milk warm
  • 4 3/4 tablespoons granulated sugar
  • 4 egg yolks
  • 1 lemon
  • 1 tablespoon rum
  • salt
  • apricot jam
  • powdered sugar

Directions

    In a bowl, make a well with the flour.

    Add the yeast and mix with the milk and granulated sugar. Mix well.

    Cover with a moist towel and allow to rise in a warm place.

    Add the egg yolks, lemon zest, rum, and a pinch of salt to the dough and mix well. Leave to rise again.

    Roll out the dough to a thickness of 2.5 centimeters and cut into discs with a round cutter.

    Cover and leave to rise again.

    Deep-fat fry the discs in hot oil, covering the pan briefly. Then turn each one and fry the other side.

    Drain on paper towel.

    Make a small incision in each doughnut and, using a syringe, fill with apricot jam.

    Sprinkle with powdered sugar and serve.
