- 10 eggs
- 1/2 tsp. cream of tartar
- dash of salt
- 1 Tbsp. water or lemon juice
- 1 c. sugar
- 3/4 c. sifted cake flour
Directions

1Beat egg whites until frothy.

2Add cream of tartar and beat until stiff.

3Beat egg yolks and salt until very thick and lemon colored.

4Add water.
-
5Beat in and add sugar, gradually beating until thick enough to hold a stiff peak.

6Fold egg whites and flour into egg yolk mixture.

7Pour into ungreased tube pan and bake in oven at 350° about 40 minutes.

8Invert pan and let cake hang in pan until cool.

9Makes 1 (9-inch) cake.
