Ingredients

  • 1 lb fresh green beans, trimmed
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 12 sweet red pepper, seeded and diced
  • 12 red onion, thinly sliced
  • 1 tablespoon Dijon mustard
  • 14 cup fresh orange juice (not frozen)
  • 2 teaspoons brown sugar
  • 13 cup almonds, toasted and chopped
  • 1 teaspoon fresh oregano
  • salt and pepper
  • 1 pinch hot pepper flakes (optional)

Directions

    To a medium pot of boiling water, add beans and cook just untl they are tender crisp - approximately 5 minutes.

    Meanwhile, melt butter and Olive oil in a skillet over medium heat.

    Add red pepper and red onion and saute until the onions are soft, about 5 minutes.

    Whisk in Dijon, orange juice and brown sugar.

    Stir in the oregano, almonds and drained green beans.

    Toss to coat beans and season to taste with salt and pepper.
