Ingredients

  • 2 large onions,sliced thick
  • 3 large carrots, diced large (cut them into about 3 pieces)
  • 5 potatoes, quartered (leave the smaller ones whole)
  • 6 sausages (pork or beef..your choice)
  • 1/2 lb bacon
  • 1 bottle, Guinness Beer (or beef broth)
  • 3 garlic cloves, smashed

    Grill your sausages (or cook whichever way) and set aside to cool slightly once cooked.

    Cut each in half.

    In a pan, fry your bacon.

    Remove once cooked, drain most (but not all)the bacon fat and add onions and garlic.

    Cook 2 min to JUST soften the onions slightly.

    In a Dutch oven lay a layer of potatoes, onions, carrots, bacon and sausage, season with salt and pepper.

    Keep layering until you've used up all your ingredients.

    Add a bottle of Guinness (or beef broth) and sprinkle with fresh parsley.

    Place in 400AF oven with tightly fitted lid for 2 hours or until everything cooked through.

    You can do the same thing in a slow cooker.

    On high for 2.5 hours or on low for about 4hours or so.

    Add more beer or beef broth if all the liquid evaporates.

    Remember it's meat and potatoes, not a stew..(not this one, anyway) so you want very little liquid at the end.
