- 4 lbs potatoes, peeled and cut into 2 inch cubes
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 6 tbsp butter, melted
- 1/4 cup chopped fresh chives
- 2 tbsp minced garlic
Directions

1Preheat oven to 400°F. Coat a 5-cup shallow baking dish with cooking spray.

2In a large pot, combine potatoes and enough salted bring water to cover. Bring to a boil. Boil for 15 mins, or until tender. Drain and return to pot. Mash. Add remaining ingredients and season. Transfer 1 cup of mixture to a piping bag fitted with a star tip. Transfer remaining to prepared dish. Pipe potatoes around edge of baking dish and bake for 25-35 mins, until puffed and golden brown.
