Ingredients
- 1 boiled duck
- 1/4 c. celery, chopped
- 1/2 medium onion, chopped fine
- 1/2 c. bell pepper, chopped
- 1 box Uncle Ben's wild rice
- 1 can Ro-Tel
- 1 can cream of mushroom soup
- 2 c. broth from duck
Directions

1Boil duck until tender.

2Steam celery, onion and bell pepper in bacon grease.

3Pour Ro-Tel in bottom of casserole dish.

4Pour onion, celery and peppers on top.

5Add boiled duck (deboned and cut in small pieces).

6Add 1 box Uncle Ben's wild rice, sprinkling the seasoning over it.

7Add 1 can cream of mushroom soup to the 2 cups of broth and beat before adding to the dish.

8Cover with aluminum foil and cook approximately 35 minutes at 350°.

9Be sure to cover dish or it will be dry.
