- 4 to 5 lb. ready to cook duckling
- 2 unpeeled oranges, quartered
- 1 clove garlic, chopped
- 1 tsp. salt
- 3 whole black peppers
- 1/2 c. butter or margarine, melted
- 1/4 c. Burgundy
- 1/2 c. orange marmalade (Seville type)
Directions

1Preheat oven to 425°.

2Stuff duckling with orange quarters, garlic, salt and peppers.

3Truss.

4Place duckling on rack in shallow roasting pan.

5Brush top well with butter.

6Pour Burgundy over and roast, uncovered, 30 minutes.
