- 1 lb. grated Jack cheese
- 2 cans diced chiles
- 4 eggs
- 1 medium-size can stewed tomatoes, drained

1Preheat oven to 325°.

2Butter a deep casserole.

3Make layers of cheeses and chiles.

4Separate eggs and beat whites until stiff. Beat egg yolks and then fold them into the egg whites.

5Gently pour eggs over cheeses and chiles, covering them and ooze through with a fork.

6Bake 30 minutes.

7Add drained tomatoes, pushing them down with a fork.

8Bake an additional 30 minutes.
