Dutch Apple Cake

  • 1 c. sifted all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 Tbsp. sugar
  • 1/4 c. shortening
  • 1 egg
  • 3 1/2 to 4 c. sliced, pared and cored apples
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 3 Tbsp. sugar
  • 3 Tbsp. melted butter
  • 1/3 c. current jelly or apricot jam
  • 1 Tbsp. hot water

Directions

    Sift flour, baking powder, salt and 3 tablespoons sugar.

    With pastry blender, cut in shortening until like coarse corn meal. With a fork stir in combined egg and milk.

    Spread dough in a greased 12 x 8 x 2-inch baking dish.

    On top, arrange apple slices, slightly overlapping in parallel rows, with pointed edges down.

    Sprinkle with combined cinnamon, nutmeg, 3 tablespoons sugar and butter.

    Bake 35 minutes at 400° or until apples are tender.

    Beat jelly with water to make syrup.

    Brush over fruit when done.
