- 5 tablespoons flour
- 12 teaspoon salt
- 18 teaspoon pepper
- 12 teaspoon parsley, minced
- 1 teaspoon butter
Directions

1Cook potatoes until tender.

2Add additional water to make a quart.

3In frying pan; melt 2 T butter.

4Add flour, stirring to avoid burning, and cook until flour is golden brown.

5Add to the potatoes and water.

6Stir until creamy, but do not mash the potatoes.

7Simmer until soup thickens.

8Add parsley, seasoning and remaining butter.
