  • 1/4 c. margarine or butter
  • 3 eggs
  • 3/4 c. whole skim milk
  • 3/4 c. flour (white or whole wheat flour)

Directions

    Use a deep cast-iron pan, 2 to 3-quarts.

    Put butter or margarine in the pan and put into a 425° oven to melt butter.

    Put eggs in an electric blender and whirl at high speed for 1 minute. While motor is running, gradually pour in milk, then slowly add flour and continue mixing for 30 seconds.

    Remove pan from oven and pour batter into the hot melted butter.

    Return to the oven and bake until puffy and well browned, 20 to 25 minutes at 425°.

    Serve hot topped with fresh lemon juice and powdered sugar.

    Makes 3 to 6 servings.
