- 1 medium onion, chopped
- 6 medium potatoes, diced
- 3/4 lb. (1 1/2 to 1 3/4 c.) small curd cottage cheese
- 1 Tbsp. chives
- chopped parsley
- 3 Tbsp. oil
- 1 (13 oz.) can evaporated milk
- 1/4 tsp. cumin
Directions

1Saute onion in oil in large kettle.

2Add cumin and chives. Boil potatoes in just enough water to cover them.

3Simmer until tender.

4Add milk to onion; bring just to a boil.

5Add cooked potatoes.

6Stir in cottage cheese.

7Top with chopped parsley.
