Dutch Potato Soup

  • 1 medium onion, chopped
  • 6 medium potatoes, diced
  • 3/4 lb. (1 1/2 to 1 3/4 c.) small curd cottage cheese
  • 1 Tbsp. chives
  • chopped parsley
  • 3 Tbsp. oil
  • 1 (13 oz.) can evaporated milk
  • 1/4 tsp. cumin

Directions

    Saute onion in oil in large kettle.

    Add cumin and chives. Boil potatoes in just enough water to cover them.

    Simmer until tender.

    Add milk to onion; bring just to a boil.

    Add cooked potatoes.

    Stir in cottage cheese.

    Top with chopped parsley.
