Easy Asian Salmon

- 1 tbsp. peanut oil
- 1 1/2 lb. skinless salmon fillet
- 4 shallots
- 2 clove garlic
- 3 tbsp. brown sugar
- 1/4 c. soy sauce
- 1/4 c. fresh lime juice
- 1 c. cooked rice
- 1/4 c. sliced cucumber
- 1/4 c. mint sprigs
Directions

1Heat oil in a large wok or a large, deep skillet over medium heat.

2Cook salmon, without stirring, about 2 minutes.

3Then continue to cook, turning pieces until lightly browned on all sides, about 1 minute more; remove to a bowl.

4Increase heat to medium-high.

5Add shallots and garlic to wok and stir-fry 1 to 2 minutes.

6Sprinkle with sugar and continue to stir.

7When sugar begins to melt and caramelize, 1 to 2 minutes, pour in soy sauce, lime juice, and 1 tablespoon water.

8Let liquid reduce about 2 minutes, then add salmon back to wok.

9Reduce heat to medium and gently coat salmon with caramel sauce.

10Serve immediately with rice, cucumber, and mint sprigs.
