Easy Asian Salmon

  • 1 tbsp. peanut oil
  • 1 1/2 lb. skinless salmon fillet
  • 4 shallots
  • 2 clove garlic
  • 3 tbsp. brown sugar
  • 1/4 c. soy sauce
  • 1/4 c. fresh lime juice
  • 1 c. cooked rice
  • 1/4 c. sliced cucumber
  • 1/4 c. mint sprigs

    Heat oil in a large wok or a large, deep skillet over medium heat.

    Cook salmon, without stirring, about 2 minutes.

    Then continue to cook, turning pieces until lightly browned on all sides, about 1 minute more; remove to a bowl.

    Increase heat to medium-high.

    Add shallots and garlic to wok and stir-fry 1 to 2 minutes.

    Sprinkle with sugar and continue to stir.

    When sugar begins to melt and caramelize, 1 to 2 minutes, pour in soy sauce, lime juice, and 1 tablespoon water.

    Let liquid reduce about 2 minutes, then add salmon back to wok.

    Reduce heat to medium and gently coat salmon with caramel sauce.

    Serve immediately with rice, cucumber, and mint sprigs.
