Easy Baked Chicken

  • 4 each chicken breasts
  • 1 x salt and black pepper salt & pepper, to taste
  • 1 each artichoke hearts marinated, can/jar
  • 2 cups mushrooms, wild assorted
  • 1/4 cup scallions, spring or green onions chopped
  • 1 cup white wine

Directions

    Preheat oven to 350F (180C).

    Place chicken in casserole dish, season with salt and pepper.

    Drain artichokes, reserving marinade.
  4. 4
    Chop artichokes into quarters and place over chicken.
  5. 5
    Add mushrooms and scallions.

    Pour artichoke marinade and white wine over chicken.

    Bake for 45 minutes.

    Remove from oven, and serve warm.
