Easy Beef Stroganoff

  • 1 lb. boneless beef round steak (3-inches thick)
  • 2 Tbsp. butter or margarine, divided
  • 1/2 c. chopped onion
  • 1 can cream of mushroom soup
  • 1/2 tsp. paprika
  • 1/2 c. sour cream or yogurt

Directions

    Slice beef across grain in very thin strips.

    Brown 1/2 meat in skillet on high heat with 1 tablespoon margarine and 1/2 onion. Cook until no pink is showing; set aside.

    Repeat with remaining butter, beef and onion.

    Return all mixture to skillet.

    Stir in soup and paprika.

    Heat through.

    Stir in sour cream.

    Serve over cooked noodles.
