Easy Brined Chicken

- 6 cups Cold Water
- 3 Tablespoons Salt
- 1- 1/2 Tablespoon Whole Black Peppercorns
- 1 teaspoon Cayenne Pepper
- 3 cloves Garlic, Peeled
- 1 Spring Onion, Cut Into Thirds
- 1 whole Chicken, 3-4 Pound Size, Cut Into Even Sized Pieces With The Skin On

1In a large bowl, combine the water, seasonings, garlic and onions.

2Place the chicken pieces in the brine mixture making sure they are submerged.

3I like to cut the breast pieces in half so they are more similar in size to the thighs.

4This just makes it easier to time the cooking later on.

5Cover the bowl with plastic wrap and allow to sit in the refrigerator for at least 2 hours.

6Preheat your oven to 375 F. While the oven heats, remove the chicken from the refrigerator, remove the chicken from the brine and arrange the pieces on a broiling pan, skin side up.

7Lightly pat excess moisture off the top of the chicken with a paper towel.

8However, do not rub the chicken!

9You do not want to remove the seasoning from the chicken.

10Bake the chicken for 1 hour and 15 minutes.

11The skin should be deeply golden and crisp and all juices should run clear from the meat.
