- 2 1/4 c. cake flour
- 2 tsp. soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 2 c. sugar
- 1 1/2 c. oil
- 4 eggs
- 1 c. chopped pecans
- 2 (8 oz.) jars baby food carrots
- Frosting
Directions

1Sift cake flour, soda, salt and cinnamon together.

2Beat sugar, oil and eggs in mixer bowl until smooth.

3Add flour mixture; beat well.

4Stir in pecans and carrots.

5Pour into greased and floured 9 x 13-inch cake pan.

6Bake at 325° for 40 minutes or until cake tests done.

7Cool.

8Spread frosting over cooled cake. Yield:
