  • 2 1/4 c. cake flour
  • 2 tsp. soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 2 c. sugar
  • 1 1/2 c. oil
  • 4 eggs
  • 1 c. chopped pecans
  • 2 (8 oz.) jars baby food carrots
  • Frosting

Directions

    Sift cake flour, soda, salt and cinnamon together.

    Beat sugar, oil and eggs in mixer bowl until smooth.

    Add flour mixture; beat well.

    Stir in pecans and carrots.

    Pour into greased and floured 9 x 13-inch cake pan.

    Bake at 325° for 40 minutes or until cake tests done.

    Cool.
