  • 2 c. sugar
  • 1 1/4 c. oil (may be substituted with applesauce)
  • 3 eggs
  • 2 tsp. vanilla
  • 2 1/4 c. flour
  • 2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. allspice
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 c. shredded coconut
  • 2 c. shredded carrots
  • 8 oz. pineapple with juice
  • 1 c. chopped nuts

Directions

    Preheat oven to 350°.

    Mix thoroughly sugar, oil, eggs and vanilla.

    Add rest of ingredients.

    Mix until everything is moist. Pour into a greased and floured cake pan (Bundt or oblong cake). Test after baking for 45 minutes, usually takes about 1 hour.
