- 2 c. sugar
- 1 1/4 c. oil (may be substituted with applesauce)
- 3 eggs
- 2 tsp. vanilla
- 2 1/4 c. flour
- 2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. allspice
- 2 tsp. baking soda
- 1 tsp. salt
- 2 c. shredded coconut
- 2 c. shredded carrots
- 8 oz. pineapple with juice
- 1 c. chopped nuts
Directions

1Preheat oven to 350°.

2Mix thoroughly sugar, oil, eggs and vanilla.

3Add rest of ingredients.

4Mix until everything is moist. Pour into a greased and floured cake pan (Bundt or oblong cake). Test after baking for 45 minutes, usually takes about 1 hour.
