- 4 boneless, skinless 1/2 chicken breasts
- 1 (15 oz.) can Italian stewed tomatoes
- 1 (15 oz.) can tomato sauce
- 1 to 2 celery stalks
- 1 medium onion
- 1 green pepper
- 1/4 tsp. tarragon, dried
- 1/4 tsp. basil
Directions

1In a large skillet spray Pam and saute pounded chicken breasts for about 5 minutes on each side (until pink is gone).

2Remove from pan.

3Chop the celery, onion and green pepper and saute in pan until onion is transparent.

4Add can of stewed tomatoes and can of tomato sauce.

5Sprinkle in tarragon and basil.

6Heat until bubbly, about 10 minutes.

7Return chicken breasts to the sauce and heat another 10 minutes or so.

8Serve with or over rice.
