Easy Chicken Mole

Ingredients
- 6 chicken thighs
- 2 tsp. ancho chile powder
- 1 tsp. ground cumin
- 2 tbsp. canola oil
- 1/2 tsp. kosher salt
- 1/2 tsp. Freshly ground pepper
- 1/2 jar prepared mole sauce
- 2 c. water
- 1/2 c. grated Cotija cheese or crumbled feta cheese
- Chopped cilantro
Directions

1Heat oven to 400 degrees F. Have ready a shallow baking dish large enough to accommodate chicken in a single layer.

2Combine chile powder and cumin in a small cup; rub over both sides of chicken.

3Heat oil in a large skillet over medium-high heat; add chicken, skin side down.

4Cook 5 minutes, or until skin is nicely browned; turn chicken.

5Cook second side 2 minutes, until no longer pink on surface.

6Remove skillet from heat.

7Sprinkle chicken with salt mixture.

8Mix mole and water in a small saucepan and bring to a boil, whisking until smooth.

9Pour onto bottom of baking dish.

10Place chicken skin side up on top of sauce.

11Sprinkle with cheese.

12Bake 22 to 26 minutes, until chicken is fully cooked.

13Transfer to plates, spooning sauce from baking dish over chicken.

14Garnish with chopped cilantro.
