- 1/2 lb. mushrooms
- 1 medium zucchini
- 1 medium onion
- olive or salad oil
- 6 chicken cutlets
- 2 Tbsp. flour
- 1 (14 to 16 oz.) can tomatoes
- 3 Tbsp. balsamic vinegar
- 1/2 tsp. salt (optional)
Directions

1About 45 minutes before serving, thickly slice mushrooms and zucchini.

2Chop onion.

3In 12-inch skillet over medium heat in 1 tablespoon hot oil, cook zucchini until tender-crisp and lightly browned.

4Remove to plate.

5In same skillet in 1 more tablespoon hot oil, cook mushrooms until browned.

6Remove to bowl.
