Easy Crispy Coconut Prawns (Shrimp)

- 1 cup rice flour
- 250 g dried shredded coconut
- 3 eggs
- 1 kg green prawns
Directions

1Peel and devein the prawns, leaving the tail intact.

2Place the rice flour, lightly whised eggs and coconut into seperate bowls.

3Ensure the prawns are fully covered in the rice flour.

4Then one prawn at a time dip them into the lightly whisked egg mix and then press firmly into the coconut to coat evenly.

5Deep fry for 1 to 2 minutes or until lightly browned.

6It's best to do small batches at a time.

7Serve with a dipping sauce or flavoured mayonnaise.
