  • 1/2 Eggplant (slim Japanese type)
  • 1 Shimeji mushrooms (or maitake or shiitake mushrooms)
  • 1 Shredded nori seaweed
  • 1/4 of one Chicken breast
  • 2 tbsp Soy sauce
  • 1 tbsp Sake
  • 2 tbsp Mirin
  • 1 tbsp Sugar
  • 1 tsp Juice from grated ginger
  • 1 Cheese

Directions

    Slice the chicken breast, sprinkle with sugar (not listed), and let sit for 30 minutes.

    Thickly slice the eggplant on the diagonal.

    Cook the mushrooms with the stumps intact.
