- 1 salmon fillet, about 2 pounds with skin
- 2 tablespoons brown sugar
- 2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 1 -2 tablespoon liquid smoke
Directions

1Coat an 11 inch by 7 inch glass pan with non stick cooking spray.

2Sprinkle salmon with brown sugar, salt and pepper.

3Drizzle with liquid smoke.

4Cover and refrigerate for 4-6 hours.

5Drain and discard liquid.

6Bake@ 350 degrees Fahrenheit for 35-45 minutes or until fish flakes easily with fork.

7Cool at room temperature then refrigerate 8 hours or overnight.
