Easy Egg Casserole

Ingredients

  • 6 eggs
  • 3 c. milk (can use low-fat milk)
  • 1 lb. sausage or turkey sausage
  • 2 Tbsp. margarine
  • 1 small onion, chopped
  • 1 green pepper, chopped
  • 7 slices white bread
  • 8 oz. low-fat shredded Cheddar cheese
  • 1/2 tsp. pepper

Directions

    Break bread up into small pieces in a 9 x 13-inch pan.

    Mix eggs and milk; pour over bread.

    In a separate pan, brown sausage and drain.

    Saute onion and green pepper until tender.

    Add sausage to bread/milk/egg mixture.

    Sprinkle with Cheddar cheese. Top with onion and green pepper.

    Cover and refrigerate overnight. Bake one hour at 350°.
