Easy Eggplant Casserole

- 1 medium eggplant
- 1 Tbsp. butter
- 1/2 c. cheese, grated
- 1 c. bread crumbs or crushed saltines
- 1 green bell pepper (optional)
- 1 onion, chopped
- 1 egg
- 1 c. milk
- salt and pepper to taste
Directions

1Peel and cut eggplant in chunks and boil until tender.

2Drain and mash with butter.

3Add slightly beaten egg, milk, grated cheese and crumbs.

4Saute onion and bell pepper.

5Add and mix well.

6Dot with cheese and bake 30 to 40 minutes at 350°.
