Easy Ginger Pickled Beets

  • 1 bunch Red Beets
  • 1/4 cups Ginger, Cut Into Small Cubes
  • 1 whole Small White Onion
  • 1/4 cups Apple Cider Vinegar
  • 2 cups Water
  • 1 Tablespoon Dill Weed, Fresh Or Dried
  • 1 Tablespoon Sugar
  • 1 teaspoon Dried Mustard
  • 1 teaspoon Salt

Directions

    Steam beets, ginger and 3/4 of the onion for 15-20 minutes.

    Combine the remaining ingredients, include the raw onion, in a medium sized bowl.

    Put steamed ingredients in bowl, cover at room temp for 30 minutes to one hour.

    Drain, chill and serve.
