- 1 bunch Red Beets
- 1/4 cups Ginger, Cut Into Small Cubes
- 1 whole Small White Onion
- 1/4 cups Apple Cider Vinegar
- 2 cups Water
- 1 Tablespoon Dill Weed, Fresh Or Dried
- 1 Tablespoon Sugar
- 1 teaspoon Dried Mustard
- 1 teaspoon Salt
Directions

1Steam beets, ginger and 3/4 of the onion for 15-20 minutes.

2Combine the remaining ingredients, include the raw onion, in a medium sized bowl.

3Put steamed ingredients in bowl, cover at room temp for 30 minutes to one hour.

4Drain, chill and serve.
