  • 1 lamb about 2 2/3 lb, bone, tendons and fat removed, meat cubed
  • 1 pound carrots peeled and cut into thick slices
  • 4 onions cut into wedges
  • 2 1/4 pounds cabbage quartered and core removed then cut into wide strips
  • 1 pound potatoes peeled and cut into quarters
  • 1 bunch fresh thyme washed and leaves removed from 12 sprigs
  • 4 bay leaves
  • 2 cups vegetable stock
  • 3 sprigs fresh parsley finely chopped

Directions

    Layer meat, carrots, onions, cabbage and potatoes in a Dutch oven. Season each layer and add thyme and bay leaves. Add stock then cover and simmer over medium heat for 1 hour. Adjust seasoning and serve garnished with parsley.
