  • 2 to 3 eggplant
  • Hunt's special tomato paste
  • salt, pepper, garlic powder and oregano to taste
  • 1 c. grated Cheddar cheese
  • Parmesan cheese

Directions

    Slice eggplant; peel if very large.

    Stir seasonings into sauce.

    Layer eggplant, sauce and grated cheese.

    Repeat.

    Top with Parmesan cheese.

    Bake at 350° for about 30 minutes or until bubbly.
