  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 1 cup bell pepper, chopped (green, yellow, red)
  • 2 garlic cloves, minced
  • 1 lb smoked sausage, cut into slices
  • 1 cup rice
  • 2 cups chicken broth
  • 3 tablespoons tabasco brand green pepper sauce
  • 1 (14 1/2 ounce) can diced tomatoes, drained
  • cajun seasoning

Directions

    melt butter in large heavy saucepan over medium-high heat.

    Add onion, bell peppers,garlic, and sausage.

    Cook for 5 minutes or until vegetables are tender,stirring often.

    stir in rice, chicken broth, Tabasco sauce, tomatoes, and cajun seasoning to taste.

    mix well and bring to a boil.

    reduce heat, cover, and simmer 25 minutes or until rice is tender.

    remove from heat and let stand 5 minutes longer before fluffing with a fork.
