Easy Lemon Bars

  • 1 pkg. one step angel food cake mix
  • 21 oz. can lemon pudding or pie filling
  • 3/4 c. coconut or 1/2 c. chopped nutmeats or both (optional)
  • 1 tsp. lemon extract (optional)

Directions

    Do not use an electric mixer.

    Stir together dry cake mix and pie filling.

    Stir in optional ingredients if desired.

    Pour into greased and floured 10 x 15-inch pan (jelly roll pan).

    Bake at 350° for 25 minutes.

    Cool completely at room temperature.

    If desired, dust with powdered sugar or top with powdered sugar glaze or cream cheese frosting.

    Cut into bars.
