Easy Lemon Risotto Recipe

Ingredients
- 1 onion, minced
- 1/2 c. butter
- 1 pound Aborio (Italian rice)
- Grated zest of 2 lemons
- Juice of 1 lemon
- 2 c. chicken broth
- 1 c. ricotta cheese
- 1/2 c. fresh grated Parmesan
Directions

1In a food processor, process onions till finely minced.

2In a 2 qt pan over low heat, heat butter.

3Add in onion and cook till soft.

4Add in rice, lemon zest and juice.

5Stir.

6Add in sufficient broth to cover.

7Cook, partially covered and stir frequently, about 20 min or possibly till broth is absorbed.

8Add in ricotta and toss.

9Sprinkle rice with Parmesan cheese, cover tightly and let stand off heat 3 min.

10Serves 6.
