Easy Make-Ahead Mashed Potatoes

  • 8 cups (about 4 pounds) peeled potatoes, cut into 1-inch pieces
  • 2 teaspoons salt
  • 3/4 cup milk
  • 1/2 cup Land O Lakes Butter, softened
  • 1 (3-ounce) package cream cheese, softened, cut into chunks
  • Salt
  • Pepper
  • Paprika, if desired
  • Chopped fresh parsley, if desired

Directions

    Place potatoes in 4-quart saucepan.

    Cover with water; add 2 teaspoons salt.

    Bring to a boil over high heat.

    Reduce heat to medium.

    Cook potatoes 15-18 minutes or until fork tender.

    Place hot, cooked potatoes in bowl.

    Add all remaining ingredients; mash with potato masher or beat with hand mixer until smooth.
