- 2 tbsp. oil
- 1 cup uncooked rice
- 1 can (14 oz.) stewed tomatoes
- 1 sm. onion, minced
- 1/4 cup chopped green pepper
- 1 tsp. chili powder
- 2 cups water
Directions

1In a large skillet, heat oil and add rice.

2Saute, stirring for 5 minutes or until evenly browned.

3Add all ingredients; mix well.

4Cover with lid; simmer until rice is tender for approximately 30 minutes.

5Remove lid and let rice dry out.
