  • 2 tbsp. oil
  • 1 cup uncooked rice
  • 1 can (14 oz.) stewed tomatoes
  • 1 sm. onion, minced
  • 1/4 cup chopped green pepper
  • 1 tsp. chili powder
  • 2 cups water

Directions

    In a large skillet, heat oil and add rice.

    Saute, stirring for 5 minutes or until evenly browned.

    Add all ingredients; mix well.

    Cover with lid; simmer until rice is tender for approximately 30 minutes.

    Remove lid and let rice dry out.
