Ingredients: 4 Beaten Eggs; 2 Cups Sugar; 1 1/2 Cup Oil; 3 jars (4 1/2 oz) baby food - pureed carrots; 2 1/2 Cups Flour; 2 tsp baking soda; 1 tsp salt; 1 tsp cinnamon; Optional:; pecans (1/4 cup chopped); raisins (1/4 cup); coconut (1/4 cup); Frosting:(Double if doing layer cake); 3 oz cream cheese room temp; 1 Tblsp butter; 1 tsp vanilla; 2 cups powdered sugar
