Easy Okara Burger

- 1/2 Carrot
- 1 Onion (large)
- 200 grams Ground pork
- 100 grams Fresh okara
- 1 Egg
- 2 tbsp Panko
- 30 ml Milk
- 1 dash Salt and pepper
- 10 grams Butter
- 1 bunch Shimeji mushrooms
- 5 tbsp Tonkatsu sauce (Japanese-style Worcestershire-style sauce or steak sauce)
- 4 tbsp Ketchup
- 2 tbsp Mirin
Directions

1Mince the carrot and onion.

2Saute both until the onions are tender, and then season with salt and pepper.

3When finished, turn off the heat and let cool.

4Combine the egg, panko, and milk in a bowl.

5Add the okara and mix.

6Add the ground pork, cooked carrots and onions, and salt and pepper.

7When done mixing, form round patties and use the palms of your hands to knock out the air pockets.

8Heat oil in the frying pan and pan-fry 4 burgers at once.

9Once each one has browned, place on a plate.

10Use the same frying pan to make the sauce.

11Put in 10 g of butter and saute the shimeji mushrooms.

12Once the shimeji have become tender, lower the heat to low and add the tonkatsu sauce, ketchup, and mirin.

13Pour the sauce over the burgers and they're done.
