Ingredients
- 1/2 lb. sausage links
- 1 small onion
- 1 clove garlic
- 1 1/2 c. tomatoes
- 2 1/2 c. chicken broth
- 1 1/2 c. rice
- 1 bay leaf
- salt and pepper
- 6 1/2 oz. can chicken, drained
- 1 c. frozen peas, thawed
Directions

1In frying pan, cook the sausages until browned; remove sausages.

2Save 2 tablespoons fat and pour off the rest.

3Dice onion and mince garlic; add to pan.

4Cook until tender.

5Drain tomatoes, reserving juice, and chop the tomatoes.

6Add enough stock to juice to make 3 cups.

7Stir rice into onion mixture.

8Add stock mixture, tomatoes, bay leaf and 1/2 teaspoon salt.

9Bring to boil, cover, reduce heat and simmer 15 minutes.
